Potato salad with apples and bacon

    stalk celery, chopped
  • 1
    medium-sized onion, finely chopped
  • 45

    chopped fresh parsley
  • 5
    rashers bacon, grilled and chopped
  • SALAD DRESSING
  • 30
    ml
    wholegrain mustard
  • 5
    ml
    prepared English mustard
  • 30
    ml
    honey
  • 160
    ml
    creamy mayonnaise
  • 320
    ml
    plain yoghurt
  • salt and freshly ground black pepper
  • lemon juice and rind to taste
  • 1
    medium-sized apple, diced
 

Method

 
Boil the potatoes in lightly salted water until cooked. Drain, skin and dice the potatoes. Add the remaining salad ingredients, except the apple, and mix lightly. Beat all the salad-dressing ingredients together and season to taste with salt and pepper. Pour over the salad and mix lightly. Add the apple just before serving and mix. Serves 8.
