Potato puffs

  • 500
    g
    potatoes
  • salt
  • 2
    eggs,separated
  • 30
    ml
    parsley, finely chopped
  • 50
    ml
    Parmesan cheese
  • salt and pepper
  • oil for deep-frying
 

Method

 
Boil the potatoes in salted water until tender. Remove the skins and mash. Blend the egg yolks, parsley and Parmesan cheese, and add to the mashed potato. Season well with salt and pepper. Beat the egg whites until stiff and fold into the potato mixture. Heat the oil and drop spoonfuls of the potato mixture into the pan. Fry until golden brown. Drain on paper towelling. Serve hot.
