  • 750
    ml
    raw, grated potato
  • 1
    onion, grated
  • 15
    ml
    flour
  • 2
    eggs
  • 5
    ml
    baking powder
  • 50
    ml
    sunflower oil
  • cinnamon sugar, to serve
 

Method

Drain potato well and mix in onion, flour, eggs and baking powder until well combined. Heat oil in a large frying pan over medium heat. Drop dessertspoonfuls of batter into the hot oil, flattening the latkes slightly with the spoon. Fry until golden brown on one side, then turn and fry on the other side. Drain on paper towel and serve hot, sprinkled with cinnamon sugar. Serves 4.
