Potato balls

    potatoes, peeled and cubed
  • 1
    onion, finely chopped
  • 3
    garlic cloves, finely chopped
  • 10

    freshly grated ginger
  • 2
    large eggs, lightly beaten
  • 100
    ml
    cake flour
  • 5
    ml
    fish paste
  • 15
    ml
    light soy sauce
  • 5
    ml
    chili sauce
  • 10
    ml
    soft brown sugar
  • 30
    ml
    freshly chopped coriander
  • oil for deep frying
 

Method

40 minutes
 
1. Boil potatoes until tender. Drain, mash and allow to cool slightly. 2. Add remaining ingredients and salt to taste. Drop spoonfuls of mixture into medium hot oil and deep fry in batches for about five minutes, until crisp. Drain on kitchen paper and serve hot.
