Potato bake with bacon

    large potatoes, boiled in their jackets until tender
  • 250
    g
    bacon, chopped finely
  • 2
    cloves garlic, crushed
  • 1
    tomato, skinned and finely chopped
  • salt and freshly ground black pepper
  • 175
    ml
    plain yoghurt
  • 125
    ml
    grated Cheddar cheese
 

Method

 
Preheat the oven to 180ºC (350ºF). Spray a small oven dish with nonstick spray. Skin the potatoes and slice them. Arrange the slices in the bottom of the oven dish. Fry the bacon until crisp and set aside. Sauté the onion in the same pan until tender and add the garlic and tomato. Season with salt and freshly ground black pepper to taste. Simmer until a purée is formed. Pour over the potatoes and sprinkle with the bacon. Pour over the yoghurt and bake for 20 minutes. Sprinkle with cheese if desired, return to the oven until the cheese has melted and serve with a salad. Serves 3.
