Potato, bacon and mushroom fry

    potatoes, boiled
  • 125
    g
    streaky bacon
  • 250
    g
    button mushrooms
  • 60
    ml
    finely chopped parsley
  • 15
    ml
    oil
  • salt and freshly ground black pepper
  • 60
    g
    butter
  • eggs to serve
 

Method

 
Drain, peel and roughly cut potatoes. Remove rind and rust of bacon and cube. Heat oil in a large frying pan, add bacon and cook for 3 to 4 minutes. Slice mushrooms and cook for 5 minutes. Carefully stir in cut potatoes and butter, heat through completely. Adjust seasoning, sprinkle on parsley. Serve with eggs done as you like them.
