    butter
  • 5
    ml
    onion, finely chopped
  • 1
    large tomato, peeled and finely chopped
  • 2
    eggs, lightly beaten
  • 1
    ml
    salt
  • 1
    ml
    cayenne pepper
  • 50
    g
    Cheddar cheese, finely grated
 

Method

 
Melt the butter in a pan. Add the onion and stir-fry until soft. Add the tomato and stir-fry until a sauce is formed. Blend the eggs, salt and cayenne pepper and add. Stir until the mixture thickens. Add the cheese and mix thoroughly. Spoon the mixture onto toast and serve immediately. Serves 2.
