Pork with peanut butter sauce

    boneless pork (thick rib, chump or leg)
  • salt and pepper

    red pepper, seeded and cut into strips
  • 1
    clove garlic, crushed
  • 10
    ml
    fresh ginger, grated
  • 10

    ground coriander
  • 5
    ml
    ground cumin (jeera)
  • 30
    ml
    soft brown sugar
  • grated rind and juice of 1 lemon
  • 45

    soy sauce
  • 15
    ml
    Worcestershire sauce
  • 60
    ml
    crunchy peanut butter
 

Method

+/- 10 min
 
Cut the pork into strips and season well with salt and pepper. Fry in heated oil until just brown on the outside. (Fry for about 1 minute only, otherwise the meat will become tough and dry.) Remove from the pan and set aside. Sauté the red pepper, garlic and ginger in a little oil until soft. Add the coriander and cumin and stir-fry for another minute. Reduce the heat, add the remaining ingredients and simmer until a flavoursome sauce has formed. Return the meat strips to the pan and heat until just warm. Serve immediately with pasta or rice. Serves 3-4.
