    fresh lemon juice

    fresh cream

    natural yoghurt

    garlic, crushed

    fresh ginger, crushed

    dry thyme

    ml
    nutmeg
  • 2
    ml
    paprika
  • 3

    cumin
  • 700
    g
    leg of pork, sliced
  • 30

    olive oil
  • deep-fried poppadoms or naan breads
  • 60
    ml
    piquant peppers (Peppadews), chopped
  • fresh parsley, chopped, to serve
  • salt and pepper to taste
 

Method

Mix together the lemon juice, cream, yoghurt, garlic, ginger, thyme, nutmeg, paprika and cumin.
Add the pork slices and marinate in the refrigerator overnight.
Place the pork slices on a baking tray, drizzle with olive oil and grill until cooked.
Shake the baking tray occasionally to ensure even cooking.
To serve, place cooked poppadoms on serving plates.
Spoon some of the pork on top, add a few chopped piquant peppers and a sprinkling of parsley.
Cover with another poppadom and top with another layer of pork, piquant peppers and parsley.
