Pork stir-fry

  • MARINADE

    curry powder
  • 30
    ml
    fish sauce
  • 30
    ml
    lemon juice
  • 10
    ml
    brown sugar
  • 10
    ml
    cornflour
  • 125
    ml
    water
  • STIR-FRY
  • 500
    g
    pork strips
  • 30
    ml
    oil
  • 2
    red chillies, seeded and chopped
  • 6
    spring onions, chopped
  • 100
    ml
    unsalted cashew nuts
  • salt and freshly ground black pepper
 

Method

 
Mix all the ingredients for the marinade.
Pour over the pork strips.
Heat the oil in a skottelbraai or wok.
When very hot, remove the pork strips from the marinade and stir-fry along with the chillies and spring onions until browned.
Add the remaining marinade and heat until slightly thickened and done.
Add the cashew nuts and season to taste with salt and pepper.
Serve with rice or couscous and a mixed salad.
