Ingredients (12)

1.50 kg pork ribs
0.00 salt — to taste
1.00 fresh ginger — strips
10.00 ml fresh ginger — grated
60.00 ml sherry — dry
15.00 ml sambal oelek
125.00 ml water
20.00 ml soy sauce — dark
20.00 ml black bean sauce — or hoisin sauce
10.00 ml sugar
40.00 ml honey
20.00 ml peanut oil — or sesame oil

Method:

Preheat the oven to 180 d C.
Place the ribs and salt in a saucepan with boiling water.
Bring the water to the boil and simmer the meat uncovered for five minutes.
Drain and leave the ribs to cool.
Mix the remaining ingredients except the oil.
Heat the oil in a large pan and fry the ribs a few at a time until browned all over.
Return all the ribs to the pan, add the ginger mixture and cook for 30 minutes or until the ribs are done.
Remove the ribs from the pan with a slotted spoon and arrange on a wire rack in an oven pan.
Roast for about 15 minutes or until the ribs are crisp.
Meanwhile simmer the sauce uncovered until very thick.
Spread the hot sauce over the ribs and serve immediately.
