Pork rolls with avocado

    finely chopped spring onions

    finely chopped parsley
  • 5

    dried thyme
  • 1
    lemon, juice and rind
  • 2
    avocados, mashed
  • salt and black pepper
  • 8
    thin slices pork, fattened slightly with the palm of your hand

  • seasoned cake flour
  • oil

    onion, finely chopped
  • 125
    ml
    chicken stock
  • 75
    ml
    red wine
  • 25
    ml
    sherry
  • 250
    ml
    cream
  • 5
    ml
    cake flour
 

Method

20-30 min
 
Mix all the filling ingredients together and set aside. Season the pork slices to taste with salt and black pepper and spoon a little of the filling onto each pork slice. Roll up and secure with a cocktail stick. Dust each roll with the seasoned cake flour and fry in a little heated oil until brown on the outside. Remove from the pan. Sauté onion in the oil in the pan until soft. Add the remaining ingredients, except the cake flour, and heat until the sauce comes to the boil. Simmer until the sauce thickens slightly or thicken with the cake flour blended with a little water. Place the pork rolls in the sauce and simmer until the meat is done but not dry. Makes 6-8 pork rolls.
