6.00 pork chops — fatty sides scored
15.00 ml fresh ginger — grated
2.00 garlic — cloves, crushed
30.00 ml brown sugar — soft
30.00 ml rum — dark
15.00 ml soy sauce
15.00 ml oil
rice
15.00 ml oil
onion — finely chopped
1.00 red chilli — fresh, seeded and finely chopped
200.00 g rice — long-grain, uncooked
1.00 coconut milk — tinned
1.00 red kidney beans — tinned and drained
sea salt and freshly ground black pepper

Method:

Arrange the pork chops in a dish. Blend the remaining ingredients for the chops and pour over the meat. Marinate overnight in the fridge, or for at least one hour. Meanwhile prepare the rice: Heat the oil in a large saucepan and sauté the onion and chilli until soft. Add the rice and stir-fry lightly. Reduce the heat and add the coconut milk and kidney beans. Season with salt and black pepper to taste. Simmer for 10-15 minutes or until the rice is done, adding a little water if it has boiled dry and the rice is still not done. Arrange the chops in a baking pan and grill for about 5-10 minutes on each side or until done. Brush with the marinade occasionally. Serve with rice and a green salad.
