Pork chops with savoury rice

    pork chops, fatty sides scored

    fresh ginger, grated

    cloves garlic, crushed

    soft brown sugar

    dark rum

    soy sauce

  • onion, finely chopped
  • 1
    fresh red chilli, seeded and finely chopped
  • 200
    g
    uncooked long-grain rice
  • 1
    can coconut milk
  • 1
    can red kidney beans, drained
  • salt and freshly ground black pepper
 

Method

 
Arrange the pork chops in a dish. Blend the remaining ingredients for the chops and pour over the meat. Marinate overnight in the fridge, or for at least one hour. Meanwhile prepare the rice: Heat the oil in a large saucepan and sauté the onion and chilli until soft. Add the rice and stir-fry lightly. Reduce the heat and add the coconut milk and kidney beans. Season with salt and black pepper to taste. Simmer for 10-15 minutes or until the rice is done, adding a little water if it has boiled dry and the rice is still not done. Arrange the chops in a baking pan and grill for about 5-10 minutes on each side or until done. Brush with the marinade occasionally. Serve with rice and a green salad. Serves 4-6.
