Pork chops with pomegranate sauce

Ingredients (8)

80 ml pomegranate concentrate — (or red wine vinegar)
30 ml brown sugar
30 ml lemon — zest only
5 ml dried chilli flakes
60 ml fresh chillies — 573
pomegranate — to garnish
salt and freshly ground black pepper — to taste
8 pork — chops

Method:

Mix the pomegranate concentrate or vinegar, sugar,
lemon rind, chilli flakes and oil. Marinate the chops
in the mixture for at least 1 hour. Heat a griddle pan
or heavy-based pan and fry the chops until brown
and done. Season with salt and pepper and keep
warm. Heat the marinade and pour over the chops.
Scatter the pomegranate seeds on top to garnish.
Serve with mashed potatoes and a green salad.
