Pork chops with pomegranate sauce

    ml
    pomegranate concentrate or red wine vinegar
  • 30
    ml
    brown sugar
  • 30
    ml
    grated lemon rind
  • 5
    ml
    dried chilli flakes
  • 60
    ml
    olive oil
  • Fresh pomegranate seeds to decorate
  • Salt and pepper to taste

Method

Mix the pomegranate concentrate or vinegar, sugar, lemon rind, chilli flakes and oil. Marinate the chops in the mixture for at least 1 hour. Heat a griddle pan or heavy-based pan and fry the chops until brown and done. Season with salt and pepper and keep warm. Heat the marinade and pour over the chops. Scatter the pomegranate seeds on top to garnish. Serve with mashed potatoes and a green salad.
