Pork and litchi salad

    cooked rice
  • 1
    green pepper, seeded and diced
  • 430

    litchies, drained but reserve the juice
  • 500
    g
    leftover cooked pork, cubed
  • 1
    onion, finely chopped
  • 250
    ml
    mayonnaise
  • 250
    ml
    sour cream
  • 5
    ml
    paprika
  • 25
    ml
    parsley, finely chopped
 

Method

 
Mix the rice, green pepper, litchis and meat. Mix the remaining ingredients, also adding the reserved litchi juice. Add just enough of the dressing to moisten rice mixture and serve the remaining dressing with the salad. Chill until needed.
