Pork and chilli stew

    deboned pork thick rib
  • 15
    ml
    oil
  • salt and freshly ground black pepper
  • 1
    red chilli, seeded and finely chopped
  • 125
    ml
    meat stock
  • 125
    ml
    dry white wine
  • 100
    ml
    sour cream
  • 5
    ml
    prepared mustard
  • 10
    ml
    lemon juice
  • 30
    ml
    chopped parsley
 

Method

about 1 1/2 hours
 
Brown the meat (cut into 25 mm cubes) in heated oil. Season well with salt and pepper and add the chilli. Sauté until the chilli is glossy. Heat the meat stock and white wine and add the meat. Cover, reduce the heat and simmer for about 1 hour or until the meat is tender. Blend the cream, mustard and lemon juice. Add to the meat and mix. Simmer for another 5 minutes. Sprinkle with parsley. Serve with rice. Serves 4.
