Ingredients (11)

250.00 ml flour — cake
2.00 ml Baking powder
1.00 ml salt
1.00 eggs — whisked
190.00 ml milk
410.00 g sweetcorn — drained
175.00 g french polony — diced
2.00 tomatoes — peeled and diced
15.00 ml fresh parsley — chopped
sea salt and freshly ground black pepper
oil — for shallow frying

Method:

Sift the cake flour, baking powder and salt in a mixing bowl. Mix the egg with the remaining ingredients and add to the flour. Mix and season generously with salt and pepper. Leave for 10 minutes. (The mixture can also be left to stand overnight.)
Heat a little oil in a pan and drop tablespoonfuls of the mixture in the pan. Fry until golden brown on both sides or until done inside.
Makes about 30 fritters.
