Polony and sweetcorn fritters

    cake flour

    baking powder
  • 1
    ml
    salt
  • 1
    egg, whisked
  • 190
    ml
    milk
  • 410
    g
    sweetcorn, drained
  • 175
    g
    thick slices polony, diced
  • 2
    tomatoes, skinned and diced
  • 15
    ml
    chopped fresh parsley
  • salt and freshly ground black pepper
  • oil for shallow frying
 

Method

 
Sift the cake flour, baking powder and salt in a mixing bowl. Mix the egg with the remaining ingredients and add to the flour. Mix and season generously with salt and pepper. Leave for 10 minutes. (The mixture can also be left to stand overnight.) Heat a little oil in a pan and drop tablespoonfuls of the mixture in the pan. Fry until golden brown on both sides or until done inside. Makes about 30 fritters.
