1Heat the sugar and cloves in a saucepan with 500ml water. Stir over a low heat until the sugar has dissolved. Add the red wine and bring to the boil. Simmer until the liquid has reduced by half.
2Slice open the vanilla pod down the length and scrape out the seeds. Add them to the sugar liquid, along with the empty pod.
3Add the pears and simmer until tender. Remove from the heat and set aside to cool in the sauce. Refrigerate in the sauce until ready to serve. Place the pears on individual serving plates, drizzle with a little sauce and serve with ice cream or custard.
