1. Half-fill a shallow pan with water, add vinegar and bring to the boil.
Break egg into a cup, slide into the water. Use two spoons to keep the egg white around the yolk, then cover the pan with a lid and simmer for 3-5 minutes, depending on whether you like the eggs slightly runny or firm.
2. Remove with a slotted spoon and serve immediately.
