CRUST
240.00 g flour — cake
20.00 ml Baking powder
5.00 ml salt
60.00 g butter — soft
125.00 ml milk
TOPPING
100.00 ml chutney
250.00 g bacon — streaky
1.00 onion — finely chopped
2.00 tomatoes — large, sliced
100.00 g cheddar cheese — grated
250.00 ml milk
1.00 eggs — extra-large, beaten
2.00 ml salt
2.00 ml cayenne pepper
30.00 ml fresh parsley — chopped

Method:

Preheat the oven to 200 ºC (400 ºF). Grease a 34 x 30 x 5 cm ovenproof dish with margarine. Combine the cake flour, baking powder and salt in a mixing bowl. Add the butter and rub in with your fingertips until the mixture resembles breadcrumbs. Add the milk, a little at a time (adding a little more if necessary), and mix until just blended and a soft dough has formed. Press the dough into the prepared oven dish. Spread the chutney evenly over the surface of the dough. Fry the bacon until brown. Remove from the pan and chop. Sauté the onion in the pan fat until soft and remove from the pan. Mix the bacon and onion and spoon over the chutney. Arrange the tomato slices over the bacon mixture and top with a sprinkling of cheese. Blend the remaining ingredients and pour over the pie. Bake for 35-40 minutes or until the milk mixture has set and is cooked. Serve with a green salad.
Serves 6-8.
