    large tomato, peeled and finely chopped

    cake flour

    origanum

    olive oil

    large clove garlic, crushed

    black olives, stoned and halved

    extra-large egg, whisked
 

Method

Preheat the oven to 200 ºC (400 ºF). Spray a 12-hollow muffin tin with non-stick spray or grease with margarine. Mix the tomato and sugar together and set aside. Sift together the dry ingredients, add the olive oil, garlic and olives and mix. Mix the egg and water and add to the mixture. Mix lightly until just blended and fill each hollow to three quarters. Make a hollow in the centre of each and fill with a teaspoonful of the tomato mixture. Sprinkle with a little cheese and cayenne pepper. Bake for 15-20 minutes or until a skewer inserted comes out clean. Serve hot. Makes 10 muffins.
