  • 600
    g
    cake flour
  • 10
    ml
    salt
  • 15
    ml
    sugar
  • 30
    ml
    oil
  • 10
    g
    instant yeast
  • 450
    ml
    warm water
  • extra flour for dusting
 

Method

 
1. Place all ingredients in a bowl and knead to a smooth elastic dough. Cover bowl with plastic wrap and leave to rise in a warm place until doubled in size.
2. Dust a work surface with flour and roll the dough out to a thickness of about 3 mm. Cut into circles about 12 cm in diameter using a small pot lid.
3. Place circles on baking paper and cover loosely with plastic wrap. Leave to rise for 10 minutes.
4. Transfer the pita to a cake cooling rack and place in a preheated 240 ºC oven to bake for ± 5 minutes. The pitas are cooked when they have puffed up. Remove from the oven before they turn brown and wrap in a tea towel to keep them soft.
