Piquant rice

    water
  • 5
    ml
    salt
  • 2
    ml
    turmeric
  • 4
    cardamom pods
  • 4
    whole cloves
  • 1
    stick cinnamon
  • 250
    g
    uncooked rice
  • 50
    g
    seedless raisins
  • 1
    red chilli, seeded and sliced
  • 100
    g
    frozen peas, defrosted
  • 40
    g
    almond flakes
 

Method

 
Pour the water into a saucepan and add the salt, turmeric, cardamom pods, cloves and cinnamon stick. Bring to the boil and add the rice and raisins. Reduce the heat, cover and simmer for abut 10 minutes or until all the liquid has been absorbed and the rice is tender. Add the chilli and peas and heat until the peas are heated through. Add half the almond flakes and transfer to a serving platter. Sprinkle with the remaining almond flakes just before serving. Delicious with any stew or even fish.
