Pineapple cooler

Ingredients

  • 1
    pineapple, peeled
  • 30
    ml
    brown sugar
  • 1
    Litres
    ginger ale
  • sprigs of fresh mint
 

Method

 
Cube the pineapple and blend with the sugar in a processor until smooth.
Divide among four to six glasses.
Add ice cubes and top up with ginger ale.
Garnish with sprig of mint.
Add a tot of white rum to each glass for an alcoholic version.
Makes 1 1/2 litres
