Pickled potato and apple salad

    potatoes
  • 500
    g
    apples
  • 45
    ml
    lemon juice
  • 150
    g
    jar of pickled gherkins
  • 45
    ml
    freshly chopped parsley
  • DRESSING
  • 300
    g
    mayonnaise
  • 100
    ml
    liquid from gherkin jar
  • pinch of sugar
  • fresh sprigs of parsley, to garnish
 

Method

25 minutes
 
Boil the potatoes in their jackets for 20 to 25 minutes, drain, peel and cut into cubes while still warm. Cut the apples in half and remove the cores, then cut into small cubes, pour the lemon juice over the cubes and allow to stand for 15 minutes. Slice the gherkins and add to the potatoes. DRESSING: Mix mayonnaise, gherkin liquid and sugar together and season, to taste. Pour over the potatoes. Add the apples and the parsley and mix carefully. Garnish with parsley.
