Phuthu pap in veggies

    onion, chopped

    clove garlic, crushed

Method

 
To make phuthu, bring water to the boil, add salt, pepper and maize meal and stir well with a fork until crumbly in texture. Cover, reduce heat and simmer for a few minutes. Stir frequently until cooked and fluffy. To make dressing, mix all ingredients and shake until well blended. Spoon cooked phuthu into serving dish and add half the dressing while hot. Stir well and leave to cool for a few minutes. Fry bacon in its own fat until crispy. Add peppers and onions, and fry until soft (about 3 minutes). Mix lightly into phuthu. Drizzle remaining dressing over phuthu and toss lightly with a fork. Allow to stand for a few minutes before serving.
