Pesto-coated fish

  • 800
    white fish fillets of your choice
  • lemon juice
  • salt and milled pepper to taste
  • butter and sunflower oil for frying
  • 65
    homemade or bought pesto
  • freshly grated Parmesan cheese
  • Parmesan cheese shavings


Wipe fish with a damp cloth, drizzle with lemon juice and season. Heat a little butter and oil in a frying pan and fry fish, uncovered, for 2 minutes. Cover pan and cook until just done (fish is opaque and will flake easily), about 6 minutes. Remove from pan and place on a lightly oiled baking sheet. Spread top of fish liberally with pesto and sprinkle with grated Parmesan cheese. Grill fish under a preheated grill until pesto and cheese begin to bubble. Serve immediately, decorated with shavings of Parmesan cheese. Serve this deliciously juicy fish dish with boiled new potatoes topped with a garlicky tomato vinaigrette.
