Pecan and date nougatina with honey

  • 8
    egg whites
  • 400
    g
    castor sugar
  • 250
    g
    dates
  • 125
    g
    boudoir biscuits
  • 200
    g
    pecan nuts
  • 1
    tsp
    baking powder
  • 250
    g
    whipping cream
  • 2
    Tbs
    tablespoon honey
 

Method

Preheat oven to 160 ºC.

Whizz egg whites in a food processor until stiff peaks form.

Gradually add the castor sugar until its all incorporated and the mixture is smooth and glossy.

Chop dates, biscuits and pecan nuts into small pieces and sprinkle with baking powder.
   
Stir into egg and sugar mixture and spread evenly into a swiss roll tin lined with greased baking paper.
   
Bake for 40 minutes.
   
Once cooled, cut in half lengthways and sandwich together with whipped cream and drizzled honey.
