Peanut chicken

    ml
    oil
  • 6
    chicken thighs
  • 1
    onion, sliced
  • 1
    clove garlic, crushed
  • 300
    ml
    chicken stock
  • 4
    tomatoes, peeled and cubed
  • 30
    ml
    peanut butter
  • 15
    ml
    lemon juice
 

Method

30 min
 
Heat oil in a saucepan. Add chicken and brown well on both sides. Add onion and garlic and continue to fry until onions have browned. Add chicken stock and bring to the boil. Reduce heat, cover and simmer for 15 minutes. Add tomatoes and peanut butter and mix well to combine. Simmer uncovered for a further 10 minutes. Stir in lemon juice, season to taste and serve with green vegetables and rice. Serves 4.
