375.00 ml flour — cake
salt — pinch
250.00 ml milk — powder
3.00 ml Baking powder
250.00 ml brown sugar
200.00 g margarine — soft
80.00 ml peanut butter — smooth
1.00 eggs — extra-large, yolk only
5.00 ml vanilla — essence
ICING
50.00 ml milk — powder
20.00 ml margarine
25.00 ml water — boiled
250.00 ml icing sugar — sifted
5.00 ml vanilla — essence
125.00 ml peanuts — finely chopped

Method:

Preheat the oven to 180 ºC and spray a 26 x 36 cm baking tray with non-stick spray or grease lightly with margarine. Sift the cake flour, salt, milk powder and baking powder together and add the sugar. Add the margarine and peanut butter and mix well. Add the egg yolk an essence. Mix and press the mixture into the prepared baking tray. Bake for about 20 minutes until pale brown. Cool in the baking tray. Meanwhile prepare the icing: Mix the milk powder and margarine, add the boiling water and mix until the margarine has melted. Add the icing sugar and vanilla essence and beat until smooth. Spread over the cooled cookie layer, sprinkle with the peanuts and cool until set. Cut into squares.
Makes 28 squares.
