Ingredients (9)

65.00 ml butter
65.00 ml peanut butter
65.00 ml castor sugar
80.00 ml brown sugar — soft
5.00 ml orange — zest only
1.00 eggs — extra-large, yolk only
65.00 ml raisins — seedless
250.00 ml flour — self-raising
80.00 ml peanuts — unsalted, finely chopped

Method:

Preheat the oven to 180 ºC and butter a few baking sheets or spray with non-stick spray.
Cream the butter, peanut butter, castor sugar and brown sugar together until light and creamy.
Add the orange rind and egg yolk, beating well.
Chop the raisins into smaller pieces and mix with the flour to prevent the raisins from sticking together.
Stir the flour into the butter mixture, mixing to form a dough.
Break off small pieces of dough and roll into balls.
Arrange the balls on the baking sheet, allowing enough room in between for the cookies to spread.
Flatten with a fork and sprinkle with chopped peanuts.
Bake for 7 to 10 minutes until golden brown. Allow to cool slightly on the baking sheet before transferring to a cooling rack to cool completely.
