    butter - at room temperature

    white sugar
  • 125
    ml
    brown sugar
  • 125

    crunchy peanut butter
  • 125
    ml
    unsalted peanuts - finely chopped
  • 1
    extra large egg
  • 310
    ml
    cake flour
  • 4
    ml
    bicarbonate of soda
  • 3
    ml
    baking powder
  • 2
    ml
    salt

Preheat oven to 180ºC. Beat butter until creamy.

Add white and brown sugar and continue to beat for a further 2 minutes. Stir through peanut butter, peanuts and egg.

Mix sifted flour, bicarb, baking powder and salt together. Stir into butter mixture and mix well.

Wrap dough in clingfilm and refrigerate for at least 3 hours.

Shape dough into ping-pong sized balls. Place balls on a baking tray about 8cm apart, flattening them slightly with a fork, and bake for 10 -12 minutes.

Cool and serve with ice-cold milk, tea or coffee.
