Ingredients (7)

200.00 g castor sugar
165.00 ml golden syrup
60.00 ml water
3.00 ml salt
180.00 g peanuts — roasted
30.00 g butter
5.00 ml Bicarbonate of soda

Method:

1. Generously oil a large baking sheet with a pastry brush.
2. Place sugar, golden syrup, water and salt in a microwave bowl. Stir until well blended.
3. Cook syrup mixture on HIGH for 12 to 15 minutes without stirring, until caramel begins to turn light golden. Watch carefully, as caramel burns easily and continues to cook and darken when removed from the oven.
4. Add peanuts, butter and bicarbonate of soda to caramel mixture. Stir well until peanuts are evenly coated. Immediately pour peanut mixture onto a prepared baking sheet.
5. Using two forks, quickly lift and stretch peanut mixture into a 35 x 30 cm rectangle. Allow to cool on rack or in refrigerator for 10 minutes until hard.
6. Break cold brittle into small pieces with your hands. Store in an airtight container.
