Pawpaw salad with cream cheese

    assorted lettuce leaves
  • 5
    ml
    fresh basil or coriander leaves, finely chopped (optional)
  • 2
    stalks celery, sliced
  • 1
    medium-sized pawpaw
  • 50
    g
    walnuts, finely chopped
  • 125
    g
    cream cheese
  • SALAD DRESSING
  • 2
    lemons (juice only)
  • 60
    ml
    olive oil
  • salt and freshly ground black pepper
 

Method

 
Arrange the lettuce leaves on a salad platter. Mix the basil leaves, celery and pawpaw (or use 2 papinos, peeled, seeded and cubed) in a large mixing bowl. Spoon on top of the lettuce leaves. Sprinkle with the walnuts and top with spoonfuls of cream cheese. Blend the lemon juice and olive oil. Season with salt and black pepper to taste end pour over the salad. Serves 4.
