Pasta with sausage, olives and lemon

Ingredients

  • 8
    pork sausages
  • 300
    g
    tagliatelle or other pasta
  • 30
    ml
    oil
  • 1
    onion, finely chopped
  • 6
    rosa tomatoes, halved
  • 100
    g
    pitted black olives, roughly chopped
  • 1
    lemon, the zest
  • 60
    ml
    basil pesto
 

Method

15 minutes
 
Grill the pork sausages until golden brown and cooked through.
Cut into thin slices.
Cook the pasta according to the packet instructions.
Heat the oil in a large frying pan and sauté the onions until golden.
Add the tomatoes and cook until soft.
Add the remaining ingredients and toss to coat the pasta.
Serve with a glass of white wine and crusty bread or salad on the side.
Variation:Heat 30 g butter and add 30 g flour, whisk in 250 ml milk until smooth, cook until thickened, stir in 60 ml basil pesto and then pour sauce over the pasta.
