Pasta with fresh tomato sauce

Ingredients

  • 500
    g
    small shell pasta
  • 20
    ml
    oil
  • 10
    ml
    salt
  • 4
    tomatoes, chopped
  • handful fresh basil, finely sliced (do not crush)
  • 200
    g
    black olives, pitted and sliced
  • 250
    g
    uncoloured cheese, cubed
  • 60
    ml
    olive oil
  • 1
    ml
    salt
  • 1
    ml
    freshly ground black pepper
  • fresh basil for garnishing
 

Method

20 minutes
 
Cook the pasta until al dente in boiling water to which the oil and salt have been added.
Meanwhile combine the tomatoes, basil, olives, cheese, olive oil, salt and pepper.
Drain the pasta and rinse under hot water.
Return the pasta to the saucepan and place over low heat.
Add the tomato mixture and stir until the cheese just begins to melt.
Serve immediately and garnish with whole basil leaves.
