Ingredients (13)

500.00 g haddock
1.00 onion — chopped
2.00 celery stalks — sliced
water
250.00 g pasta — screws
15.00 ml cornflour
250.00 ml milk
2.00 eggs — hard-boiled
dates — chopped
15.00 ml fresh parsley — chopped
sea salt and freshly ground black pepper
250.00 ml breadcrumbs — fresh, brown
65.00 ml cheddar cheese — grated

Method:

Preheat the oven to 200 ºC (400 ºF). Spray a medium ovenproof dish with non-stick spray or grease well.
Place the fish, onion and celery in a saucepan, cover with water and bring to the boil. Remove from the heat and leave for 10 minutes.
Drain, reserving 250 ml (1 c) of the liquid. Flake the fish.
Cook the pasta in rapidly boiling salted water for 5 to 8 minutes or until just done but still firm. Drain.
Blend the cornflour with a little of the milk. Mix the remaining milk and reserved stock and heat. Add the cornflour paste and stir over low heat until the mixture comes to the boil and thickens slightly.
Add the flaked fish and celery, onion, pasta, eggs and parsley to the sauce. Season and pour into the prepared dish.
Mix the breadcrumbs and cheese and sprinkle on top. Bake for 30 minutes until golden brown.
