Ingredients (15)

SALAD DRESSING
125.00 ml fresh chillies — 573
65.00 ml vinegar — white wine
5.00 ml lemon juice
10.00 ml orange juice
orange — or lemon, peel, julienned
fresh mixed herbs — chopped
salt and freshly ground black pepper — to taste
SALAD
500.00 g noodles
150.00 g patty pans — chopped
150.00 g courgettes — chopped
100.00 g carrots — julienned
100.00 g mangetout — snow peas
150.00 g baby corn — whole
200.00 g cherry tomatoes — whole
fresh chillies — 573

Method:

Blend all the ingredients for the salad dressing in a screwtop jar, shake well and stand for at least half an hour before using.
Cook the noodles in rapidly boiling salted water until tender, drain and rinse under cold running water.
Fry all the vegetables in a little olive oil until glossy. Season to taste with salt and pepper. Place all the ingredients in a dish, moisten with the salad dressing and chill until needed.
