    olive oil

    white wine vinegar

    lemon juice
  • 10
    ml
    orange juice
  • orange and lemon rind, cut into julienne strips
  • freshly chopped herbs
  • salt and black pepper to taste
  • SALAD
  • 500
    g
    screw noodles
  • 150
    g
    patty pans, cut into pieces
  • 150
    g
    courgettes, cut into pieces
  • 100
    g
    carrots, sliced into julienne strips
  • 100
    g
    mangetout (snow peas)
  • 150
    g
    whole baby corn
  • 200
    g
    whole cherry tomatoes
  • olive oil
 

Method

 
Blend all the ingredients for the salad dressing in a screwtop jar, shake well and stand for at least half an hour before using. Cook the noodles in rapidly boiling salted water until tender, drain and rinse under cold running water. Fry all the vegetables in a little olive oil until glossy. Season to taste with salt and pepper. Place all the ingredients in a dish, moisten with the salad dressing and chill until needed.
