Parmesan-crusted chicken casserole

    oil
  • 1
    large onion
  • 6
    sticks celery
  • 6
    courgettes
  • 20
    ml
    French mustard
  • 15
    ml
    honey
  • 60
    ml
    Bulgarian yoghurt
  • 400
    g
    deboned cooked chicken
  • 250
    ml
    chicken stock
  • 410
    g
    baked beans
  • salt and freshly ground black pepper
  • 25
    g
    wholewheat breadcrumbs
  • 30
    ml
    freshly grated Parmesan cheese
 

Method

25 minutes
 
Heat the oil in a large saucepan and sauté the onion, celery and courgettes until softened.
Stir in the mustard, honey, yoghurt and cooked chicken. Add the stock and bring to the boil. Stir in the baked beans and season to taste. Simmer for 10 minutes.
Place in a casserole dish and sprinkle with breadcrumbs and Parmesan cheese.
Place under a hot grill for 5 to 10 minutes until crust is crisp and golden.
