Paprika potatoes

    onion, finely chopped

    cloves garlic, crushed

    large green pepper, seeded and diced

    caraway seed
  • large tomato, skinned and finely chopped

    chicken stock

    sour cream
  • salt and pepper to taste

Preheat the oven to 180 ºC (350 ºF). Spray a 24 x 5 cm oven dish with non-stick spray. Peel and slice the potatoes and cook till not quite tender. Drain and, arrange in the prepared dish. Saute the onion and garlic in a little oil till soft. Add the green pepper and saute till soft. Add the paprika, caraway seeds and chopped tomato and simmer till the tomato is soft. Add the chicken stock and simmer for another 5 minutes. Remove from the heat, add the sour cream and season to taste with salt and pepper. Pour the sauce over the potatoes, cover with aluminium foil and bake for about 30-40 minutes or till the potatoes are completely done. Serve with braaivleis. Serves 4-6.
