Pancakes with fruit and nuts

    red apples
  • 30
    g
    butter
  • 30
    ml
    brown sugar
  • 2
    ml
    nutmeg
  • 90
    g
    dried apricots
  • 1
    orange, juice of
  • 8
    hot pancakes
  • Greek yoghurt
  • 30
    g
    walnuts, chopped
 

Method

 
Peel, core and slice the apples and sauté in the butter, sugar and nutmeg for two minutes.
Add the apricots and orange juice, cover and simmer for eight minutes or until the apples are soft.
Fill each pancake with a little of the apple mixture, roll up and serve immediately with a scoop of yoghurt and a sprinkling of walnuts.
