Pancake fillings: apple with cinnamon cream

    large green apples, peeled, cored and thinly sliced
  • 125
    ml
    sugar
  • 100
    ml
    raisins
  • 5
    ml
    ground cinnamon
  • 2
    whole cloves
  • 15
    ml
    lemon juice
  • water to cover the apple slices
  • 25
    ml
    butter
  • 15
    ml
    custard powder
  • ml
    brandy
  • CINNAMON CREAM
  • 250
    ml
    cream, stiffly whipped
  • 50
    ml
    castor sugar
  • 5
    ml
    ground cinnamon
 

Method

 
Place the apples, sugar, raisins, cinnamon, cloves and lemon juice in a saucepan and add just enough water to cover the apple slices. Heat and simmer until the apple slices are just soft. Add the butter and thicken the mixture with the custard powder which has been blended with a little water to form a smooth paste. Bring to the boil and add the brandy. Fill the pancakes with the apple filling. Mix all the ingredients for the cinnamon cream and serve with the pancakes.
