Painted lady fish soup

    firm white fish fillets

    fresh lemon juice

    olive oil

    onion, chopped

    cloves garlic, chopped

    fish or vegetable stock
  • 250
    g
    potatoes, cut into cubes
  • 500
    ml
    cooked half white sugar beans (painted lady beans)
  • 2
    medium tomatoes, peeled, deseeded and quartered
  • 30
    ml
    fresh chopped mint
  • 5
    ml
    paprika
  • 3
    ml
    ground cumin
  • 1
    ml
    crushed red pepper
  • 100
    ml
    fresh chopped parsley
  • salt and pepper
 

Method

 
1. Cut the fish into serving size pieces and sprinkle with lemon juice. 2. Heat the olive oil and sauté onion until soft. Add the garlic and cook for 1 minute. 3. Add the stock, potatoes, beans, tomatoes, mint, spices and two-thirds of the parsley. Bring to the boil. 4. Reduce heat, cover and simmer for 20 minutes. Uncover and simmer for 10 minutes. 5. Add fish and simmer until fish is cooked, about 10 minutes. 6. Season to taste with salt and pepper and serve soup sprinkled with remaining chopped parsley. Serves 4.
