Paella With Cracked Wheat

    olive oil

    onions, finely chopped

    garlic cloves, crushed

    chicken breasts, cut into strips

    cracked wheat, cooked according to the packet instructions until half done and drained

    chicken stock

    ml
    turmeric
  • 5
    ml
    fish spice
  • 2

    dried thyme

    tomato paste
  • 250

    frozen mixed vegetables
  • 1
    red pepper, sliced into strips
  • 1
    green pepper, sliced into strips
  • 150

    salami slices, quartered
  • 1
    kg
    marinara mix (calamari, prawns, etc)
  • 10

    salt and lemon pepper to taste
  • 1
    lemon
    grated rind and juice of 1 lemon
  • 60
    ml
    chopped fresh parsley
 

Method

Heat the olive oil in a paella pan or large frying pan and fry the onions and garlic for 3 minutes.

Add the chicken and fry for another few minutes. Add the half- cooked wheat, stock, turmeric, spice, thyme and tomato paste, stirring well.

Bring to the boil and simmer for about 10 minutes. Add the vegetables, pep- pers and salami and simmer for another 8 minutes. Add the marinara mixture and simmer for another 8 minutes or until done and the liquid has been absorbed.

Season with salt and pepper. Sprinkle with lemon juice and scatter lemon rind and parsley on top.
