    self-raising flour
  • 25

    castor sugar
  • 75

    butter, diced
  • 200
    g
    dried cranberries
  • 150
    g
    pistachio nuts, chopped
  • 100
    g
    dark chocolate, chopped
  • 30
    ml
    (2 tbsp) vanilla extract
  • 150
    ml
    (3/5cup) buttermilk

Method

 
Preheat the oven to 180°C. Sift together the flour and sugar and then rub in the butter. Stir in the dried cranberries, pistachios, dark chocolate and vanilla. Add enough liquid to make a soft dough. Spoon the mixture onto a lightly greased baking sheet. Bake for 12 to 15 minutes. Cool on a wire rack. Serve warm.
