Oven-dried tomatoes

  • 500
    ripe cocktail or plum tomatoes
  • olive oil
  • fresh sage or basil leaves
  • 3
    garlic cloves


Wipe tomatoes and slice them in half. Place halve on a lightly oiled baking sheet and dry in a cool oven at 100 ºC for 6 hours, turning occasionally with a fork. Timing will depend on taste and colour. The tomatoes should change colour and the flavour become concentrated and slightly caramelised. Cool tomatoes, and layer with garlic, fresh herbs and olive oil in sterilised jars.
