    butter

    golden syrup

    cake flour

    ml
    bicarbonate of soda
  • 2
    ml
    ground cinnamon
  • 30
    ml
    butter
  • 125
    ml
    finely chopped dates
  • 250
    ml
    milk
 

Method

 
Mix all the ingredients for the syrup in a heavy-based saucepan. Stir over low heat until the sugar has dissolved. Boil for 5 minutes. Combine the cake flour, bicarbonate of soda and cinnamon. Rub in the butter and add the dates. Mix well. Slowly add the milk while stirring continuously. Bring the syrup to the boil once more and drop spoonfuls of the dumpling mixture into the boiling syrup. Reduce the heat (the syrup must simmer slowly or it will boil over), cover and simmer for 20 minutes without removing the lid. Serve with custard, cream or ice cream.
