Ostrich steaks

    ml
    sunflower oil
  • 350
    g
    ostrich fillet steaks
  • salt and black pepper
  • 60
    ml
    Baines Prickly Pear Liqueur
  • 15
    ml
    Madagascar peppercorns
  • 250
    ml
    cream
  • 1
    lemon (juice only)
 

Method

 
Heat a heavy cast-iron pan, preferably one with grooves, until very hot. Brush with oil and fry the steaks for about 2 minutes on each side, depending on thickness.
Remove and place on a warmed serving plate and keep warm. Season with salt and pepper.
Heat the remaining ingredients, except the lemon juice, in a small pan, season and cook to reduce to a good consistency. Add lemon juice to taste and pour over the fillets. Serve immediately.
