Ostrich soup

    boneless ostrich meat, boiled until tender
  • 115
    g
    smoked ham
  • 45
    ml
    butter
  • 45
    ml
    oil
  • 1
    onion, roughly chopped
  • 1
    celery stalk, roughly chopped
  • 1
    red or yellow pepper, cut into strips
  • 45
    ml
    cake flour
  • 3
    tomatoes, peeled, seeded and chopped
  • 1.50
    Litres
    beef stock
  • 1
    ml
    caraway seed (optional)
  • chopped fresh parsley for garnishing
 

Method

 
Cut the cooked ostrich meat and ham into strips.Dust with the flour and stir-fry for five minutes or until the flour begins to brown.
Add the tomatoes, stock and meat and simmer for 30 to 35 minutes over low heat.
Sprinkle with the caraway seeds just before serving. Serve garnished with parsley.
