Ostrich kebabs with couscous

For a delicious variation, rub the ostrich with a mixture of chilli powder, cumin, chopped garlic, salt and allspice.

Ingredients

 
  • 600-800
    g
    ostrich meat, cubed
  • 12
    small, soft-dried apricots
  • 1
    small onion, cut into wedges
  • 1
    thumb-sized piece of ginger, grated
  • 40
    ml
    soy sauce
  • 100
    ml
    apricot jam
  • 30
    ml
    lemon juice
  • couscous, to serve
  • tzatziki

Method

 
Thread the ostrich, apricots and onion wedges onto kebab sticks. Mix the ginger, soy sauce, jam and lemon juice, and then baste the kebabs.

Heat a griddle pan until very hot and grill the kebabs in batches until golden-brown and medium rare. Serve with couscous and tzatziki.
